Cole and I did that cute little questionnaire this week, where I ask him what my favorite foods are, what I do when he isn’t around, and just all kinds of cuteness. He answered that my favorite food is soup, and he wasn’t that far off! (He also said that when I am not with him, I simply lay on the couch and watch Tv) Since today was a snow day, I felt obligated to make this delicious soup, which only has a few ingredients, but fills you up, and the leftovers are delicious too.
You will need the following:
1 medium onion, chopped
2T Olive Oil
One can diced basil/garlic/oregano tomatoes
3/4 pound Italian Sausage
6 cups low sodium chicken broth
1 pound fresh or frozen cheese tortellini
5 ounces baby spinach (or a great big handful)
Grated Parmesan, for serving
a loaf of crusty French bread, because, hello? It is soup day.
Heat your olive oil in a large pot. Add the onion. I wait to add the sausage for a bit, because I like to cook the onion first (and raw onions are really not my favorite). Add the sausage and cook until golden brown.
Add tomatoes until mixed together. Then add your handful of spinach and cook down. You can add more spinach if you are a spinach eater. I like to pretend I am eating a healthy soup, because it has spinach in it :).
Add your broth and bring to a boil. Be sure to use the reduced sodium chicken broth, since the sausage already has so much sodium. (See? Spinach AND reduced sodium. Who says I don’t cook healthy food?)
Add the tortellini and cook for five minutes. If your child is like my child, and is a “pasta purist”, be sure to also boil a separate saucepan of water for his own plain tortellini, so that it does not touch anything resembling vegetables or sausage.
Serve topped with grated Parmesan and with lots of crusty French bread.
